During 2018 I was honoured to visit and experience the hospitality of the Tarui Tea Garden. This small family operated organic tea producer is everything we dream of when thinking about the heart and beauty of pure leaf tea. That is why we are so pleased this year to share a very small amount of their tea with the Australian market.

Tokujo Sencha is a well-balanced savoury green tea with notes of pea and sea vegetable. This tea is pure and clean with a delicate floral fragrance resulting in a semi-sweet finish in the first infusion followed by a subtle bitterness characteristic of Japanese green teas in subsequent infusions.

Origin: Nearaicho, Shizuoka Prefecture, Japan

Flavour profile: SAVOURY | PEA | FLORAL

Processing highlights: This producer is far from orthodox growing many lesser-known Japanese cultivars and utilising some legacy tea processing equipment not seen elsewhere today. They also produce tea in an area that has difficult soil conditions working hard to improve soil by bringing minerals, in the form of green shale stones from the mountains of Tenryû.

Yamakai is an unregistered cultivar and is generally used in the production of gyokuro due to its sweet and well-balanced flavour.

Our producers have been producing tea organically since 2003. The tea is harvested from their Kiriyama garden that is located on a small mountain. With the benefit of seeing this garden for myself I can attest that the only thing exists in this parcel are the Tarui tea gardens and it is not surrounded by other tea gardens or other crops lending itself to true natural farming.

A pure and clean green Spring tea from the Kiriyama organic tea garden. A delightful and uplifting green tea that has a delicious savoury liquor and semi-sweet finish. This is a great introductory Japanese green tea as it is very well-balanced.

Takujo Sencha pairs well with seafood, rice, egg dishes, raw and lightly cooked vegetables. It also works well with other dishes that exhibit umami properties including soy sauce and shitake mushrooms.

Try this tea with a root vegetable salad and ponzu dressing or with a fruit salad.

Leaf appearance: Broken needle-like jade green leaves

Aroma: Notes of pea and sea vegtables and a delicate sakura fragrance

Liquor colour: Brilliant yellow-green

Brewing & Storage

Store in an airtight container away from light, heat and moisture.
