This exceptional Bai Hao Yin Zhen highlights everything a top grade white tea should be. Plucked from a wild tea garden the tea bushes are scattered in a forest. It requires skilled pickers to identify and pluck the small, tender and consistent sized buds. Compared to last year we feel the plucking standard is superior producing an even more luscious tea liquor.

A pure and semi-sweet tea that is the perfect balance of fresh hay, sugar snap pea and honey. The early Spring picking gives this tea a refined complexity and a liquor that is rounded and creamy. In the coming months this tea will become richer and more mellow.

Bai Hao Yin Zhen is among the most revered Chinese teas made exclusively with buds that have not yet opened. The tea is plucked for only a few days in early spring and is labour intensive to collect only the finest first buds of the new harvest.

Origin: Zhenghe Fozi Shan, Fujian province, China

Processing highlights: This lot of tea has been picked from a wild tea garden. This has created a unique aroma and flavour that is truly delightful. Our tea buds have been dried using the traditional Zhenghe craft in a purpose-built indoor structure that keeps the buds out of the direct sunlight and allows wind to flow under the shade. This year 17.8kg was produced in total.

The garden is considered a wild garden where the tea bushes are scattered throughout the forest in amongst other bushes. This requires skilled pickers to identify and pick these specific buds. About 2-2.5kg of fresh leaves can be plucked a day resulting in around 0.5kg of finished tea leaf.

Our Bai Hao Yin Zhen has been grown in the Fozi Mountains in Zhenghe county. It is located in the northern part of Fujian next to Fuding in the east, where this tea originated.

Elevation: 800m

A refined and fresh Bai Hao Yin Zhen from the very early spring harvest. The tea liquor is savoury with hay and pea notes. It has a finish that is long and sweet reminiscent of honey and a velvety mouthfeel.

This tea is best appreciated on its own. 

Leaf appearance: Large green and white buds with 1-2 small leaves covered in silvery down

Aroma: A pure and semi-sweet aroma reminiscent of freshly cut hay and a vegetables

Liquor colour: Clear ivory

Store in an airtight container away from light, heat and moisture.
