One of the four most famous Yan Cha (“cliff and boulder” teas) of the Wuyi Shan region. This complex yet clean tea has distinct fruity and floral notes with hints of cacao and toast.
This tea is a favourite when brewed using the small teapot method with each infusion revealing a distinctly unique layer and aroma.
Oolong teas from the Wuyi mountains are also known as “cliff and boulder” teas due to the rocky terrain in and around the tea gardens giving the teas a mineral flavour.

Processing: The picking standard is 3 open leaves that are plucked and sorted by hand. The leaves undergo outdoor withering and are oxidised to around 70%. Our Shui Jin Gui is roasted over charcoal 3 times resulting in a medium baking level. The tea bushes are approximately 40 years old.

A layered, semi-sweet tea that has distinct fruity and flowery flavours. Toasty, nutty, cacao and spice notes reveal themselves to leave a smooth coating on the palate, along with the recognisable mineral flavour of a Wuyi tea.
Due to its lighter flavour profile this tea pairs particularly well with food such as spicy pork and chicken dishes, cheese, spiced desserts and stone fruit. It also makes a perfect tea to finish a meal with it's creamy and semi-sweet flavour profile.
Try this tea with a Gruyère cheese or a spiced doughnut.
