The Wuyi mountain ranges are located in both Fujian and Jiangxi province. The Fujian province has a long history of tea cultivation of Lapsang Souchong.
Wuyi Shan is a mountainous area that is naturally protected and provides favourable growing conditions. The region has relatively high humidity levels, high rainfall and fog is common.
This black tea is complex exhibiting both savoury and sweet characteristics. The initial impression from drinking the tea liquor is reminiscent of smoky bacon, this mellows with subsequent infusions to highlight more complex fruit notes.
Lapsang Souchong makes a great blending ingredient and we encourage you to experiment by adding this ingredient to your cup or plate.
Lapsang Souchong is very well suited to cooking as the smoky characteristics are taken on by the food without having to smoke the food. Pairs well with savouries, pork, lamb, game and is ideal with cheese.
Try this with crystallised citrus fruit dipped in dark chocolate or lamb empanadas.
