Old Barrel Tea Co. - a collaboration of tea friends & release of Batch No. 001 Jin Xuan

By Kym Cooper. Posted

We are so excited to finally start shouting from the rooftops about a fun and exciting collaboration we have been working on for the past 6 months with our very good tea friends: Cheryl Teo (Flag & Spear) and Tania Stacey (Cuppa Cha).  The first project release. Old Barrel Tea Co. Batch No. 001 Jin Xuan. Isn't the liquor beautiful...you should try some!    Old Barrel Tea Co. started out as a bit of friendly banter between Cheryl & I over a social media post she shared of a barrel aged tea she had acquired from overseas. I casually suggested we...

A resources guide for the emerging Teaist

By Kym Cooper. Posted | 1 comment

We have been wanting to put together some of our favourite tea resources in a short guide designed to help emerging Teaists expand and grow their tea knowledge.   As a Tea Practitioner located in Australia, we have tried to highlight some of the great tea resources available locally as well as those internationally that we have personally found beneficial.  We will maintain our guide to ensure it reflects resources that are relevant, approachable and really helpful! In pursuit of tea knowledge: tea resources for the emerging teaist

By Kym Cooper. Posted

When I reflect on my tea journey to date I always wonder if the path I took to pursuit tea knowledge may have been different if I didn't approach it as haphazardly as I did. If anything, with every new tea I drink or new tea practitioner I meet, comes the realisation that tea is fluid and dynamic and mastering...

An unlikely pair: Tea & cheese

By Kym Cooper. Posted

Whilst the idea of tea & cheese pairing is not a new idea in the culinary or tea world it is certainly something new in the Brisbane (Australia) market. When we share the idea of pairing tea and cheese together I am mostly met with some curious looks followed by questions about the absence of wine. Whenever we work on a project involving tea the first criteria for us is to ensure that pure leaf tea remains the hero. We respect tea and the people that create the tea too much to play down the product to just some ubiquitous...

Cold Brew Tea

By Kym Cooper. Posted

This is a blog post we have wanted to do a substantial update to for a while. We have spent all summer at markets and events serving large batches of cold brew tea and experimenting behind the scenes with different styles and brew parameters. We feel like we are now in a good place to revise the content of this blog post.  In much of the literature on cold infusing tea, claims are made that the ratio of the tea leaf should be doubled compared to the preparation of a hot brewed tea. For example, if we use 2-3g of...
